1 large celeriac
salt
2 large dessert apples
juice of 1 lemon
175 g / 6 oz walnuts, chopped
60 ml / 4 tbs thick cream
freshly ground black pepper
15 ml / 1 tbs snipped chives
lemon twists to garnish
Celeriac salad with apple and walnuts Preparation
1- In a large pan bring 2 L / 3 1/2 pt of salted water to the boil. Peel the celeriac and cut into 10 mm / 1/2 in thick slices.
2- Put the celeriac into the pan of boiling water and cook until tender, but still firm. Drain and leave to cool.
3- Meanwhile, peel the apples and cut them in half. Remove the pips, and the core and cut the apples into 5 mm / 1/4 in dice. Pour the lemon juice over the diced apples to prevent discoloration.
4- When the celeriac is cool, cut the slices into dice.
5- Combine the diced celeriac with the chopped walnut and diced apples. Pour on the thick cream, season with salt and freshly ground black pepper to taste, and mix well so that all ingredients are covered with the sauce. Turn out into a salad bowl, garnish with lemon twists and sprinkle with snipped chives. Chill until ready to serve.
