1- Heat the oven to 220 C /425 F/ gas 7. As soon as the guinea fowl has been put in the oven to roast, prepare the apples. Peel them, leaving them whole. Using a small, sharp knife, remove almost all of the core from each apple, but leave the bast intact. Place the apples in a small ovenproof casserole and brush them with the melted butter. Cover tightly with a lid or foil.
2- When the guinea fowl has been roasting for 30 minutes, place the casserole of apples on a low shelf of the oven and bake them for the last 20-30 minutes of the cooking time for the guinea fowl. Remove the guinea fowl and apples from the oven. Turn off the oven.
3- Toss the partially thawed raspberries in the caster sugar. Fill the apple cavities with the sugared raspberries, then return them to the turned-off oven for 10 minutes while you make the gravy.
