The Fresh Flavour of cherries goes beautifuly in shape of salad. Must try it at your lunch table.
175 g/6 oz sweet red or black cherries
2 small, ripe avocados
30 ml/2 tbs chopped fresh mint
15 ml/1 tbs chopped fresh tarragon
45 ml/3 tbs olive oil
15 ml/1 tbs red wine vinegar
freshly ground black pepper
1 small, crisp lettuce
100 g/4 oz curd cheese
1- Stone the cherries. Peel and stone the avocados, and cut them into cubes. Put the cherries and avocado pieces into a bowl with the mint and tarragon.
2- Mix the oil, vinegar and pepper together and fold the dressing into the cherries and avocados.
3- Make beds of crisp lettuce hearts on 4 small plates and pile a portion of the salad on top of each one. Spoon 25 g/1 oz curd cheese on each salad and serve immediately, to prevent the avocados from discoloring.
