24 hours marinating,
then 1 1/4 hours
1.4 - 1.6 kg / 3-3 1/2 lb roasting chicken, dressed weight
juice of 1 lemon
100 ml / 3 1/2 fl oz olive oil 1 garlic clove, crushed with salt
freshly ground black pepper
75 g / 3 oz shelled walnuts
45 ml / 3 tbs chopped parsley
8 walnut halves to garnish
1- Cut the chicken into 8 pieces.
2- Mix together the lemon juice, oil, garlic and pepper in a large, shallow bowl. Add the chicken pieces, turn them in the liquid and leave to marinate or 24 hours, turning the chicken occasionally.
3- Heat the oven to 200 C / 400 F / gas 6. Grind the walnuts finely in a blender. Mix them with the parsley and 30 ml / 2 tbs of the marinade in a small bowl.
4- Put the chicken pieces in a single layer in an oven proof dish and bake for 30 minutes.
5- Remove the chicken form the oven and spread the walnuts mixture over the top. Return to the oven for a further 15 minutes.
- Serve straight from the dish, garnished with walnuts halves, Yummy Marinated chicken with walnuts is ready to eat.
