A chapon is a bread slice which has been toasted and rubbed with garlic, like a large crouton.
10 minutes plus
1 hour marinating if time
Serves 4
1 slice bread
1 garlic clove, cut in half
269 g /9 1/2 oz canned green beans, drained
425 g /15 oz canned cannellini beans, drained
425 g /15 oz canned red kidney beans, drained
1/2 onion
salt and freshly ground black pepper
a few drops of cider vinegar
30 ml /2 tbls olive oil
Three bean and chapon salad Preparation
1- Toast the bread lightly on both sides, and rub both sides with the cut sides of the garlic. Cut the toast slice in quarters and put them in a salad bowl.
2- Mix together all three kinds of beans, lightly. Grate about 30 ml /2 tbs of onion over them. Mix it in, and season to taste with salt, pepper and vinegar. toss the salad in the oil.
3- Pile the bean salad on the garlic-flavored toast in the salad bowl. leave in a cool place (not the refrigerator) for 1 hour, if you have time, before serving.
