20 minutes plus chilling time
1 kg / 2 lb ripe tomatoes, washed and roughly chopped
15 ml / 1 tbs sugar
5 ml / 1 tsp salt
2.5 ml / 1/2 tsp onion juice
juice and grated zest of 1/2 lemon
120 ml / 8 tbs thick cream
2 thick slices cooked ham, diced
1/4 cucumber, peeled and diced
15-3 ml / 1-2 tbs finely chopped fresh parsley
Easy tomato soup Preparation
1- Puree the roughly chopped tomatoes in an electric blender or by passing them through a vegetable mill, then press the puree through a fine sieve. There should be a little over 600 ml / 1 pt of puree.
2- Chill the tomato puree thoroughly in the refrigerator.
3- Just before serving, add the sugar, salt, onion juice, lemon juice and grated lemon zest. Beat well until smooth, then stir in the thick cream, Add the diced ham and cucumber. Garnish with finely chopped fresh parsley and serve chilled.
* To make onion juice, grate an onion into a piece of muslin, tie it up and squeeze to extract the juice.
